Zucchini Stir Fry

A simple, delicious stir fry!

Ingredients:

  • 1 1/2 cups zucchini, chopped into 1/4 inch chunks

  • 1 small onion, thinly sliced

  • 1/2 cup bell peppers, thinly sliced

  • 1 clove garlic, chopped

  • 1/2 tsp ginger, chopped

  • 1 1/4 tbsp sesame oil

  • 1 tsp soy sauce

  • 1 tsp apple cider vinegar

  • 1 tsp black pepper

  • sesame seeds or roasted crushed peanuts

Instructions:

  1. Pour oil into a heated pan. Stir fry ginger and garlic for 30 seconds.

  2. Add onions and cook until transparent. Add bell peppers and fry for roughly one minute.

  3. Add zucchini and stir fry over medium-high heat until they start to soften. Do not overcook as they tend to end up too soft.

  4. Add soy sauce, vinegar and black pepper to pan. Stir fry for roughly one minute.

  5. Turn off the heat and sprinkle toasted sesame seeds or roasted crushed peanuts.

  6. Serve over rice, as a side or in wraps and sandwiches. Add chicken to make it a heavier meal.
