Sautéed Zucchini & Onions with Chive Butter

Switch up the chives for whatever’s growing in your garden - basil or dill would also be delicious in the compound butter that tops this simple sautéed zucchini recipe.

Ingredients:

  • 1 tablespoon olive or avocado oil

  • 1 pound zucchini, cut into half-moons

  • 1 small red onion, cut into 1/2 inch pieces

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground pepper

  • 2 tablespoons unsalted butter, at room temperature

  • 1 tablespoon minced fresh chives

  • 1 tablespoon lemon juice

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add zucchini, onion, salt and pepper. Cook, stirring occasionally, until tender, 4 to 6 minutes.

  2. Mash butter with chives in a small bowl until combined.

  3. Remove pan from heat and stir in lemon juice. Top the vegetables with the chive butter before serving.
