Sautéed Zucchini & Onions with Chive Butter
Switch up the chives for whatever’s growing in your garden - basil or dill would also be delicious in the compound butter that tops this simple sautéed zucchini recipe.
Ingredients:
1 tablespoon olive or avocado oil
1 pound zucchini, cut into half-moons
1 small red onion, cut into 1/2 inch pieces
1/2 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons unsalted butter, at room temperature
1 tablespoon minced fresh chives
1 tablespoon lemon juice
Instructions:
Heat oil in a large skillet over medium-high heat. Add zucchini, onion, salt and pepper. Cook, stirring occasionally, until tender, 4 to 6 minutes.
Mash butter with chives in a small bowl until combined.
Remove pan from heat and stir in lemon juice. Top the vegetables with the chive butter before serving.
