One-Pot Vegetarian Taco Casserole

This Vegetarian Taco Casserole is delicious, hearty and kid-friendly! Thanks to the Quinoa, this dish is a complete protein meal for those avoiding meat!

Ingredients:

  • 1 /2 medium onion (diced)

  • 1 bell pepper (chopped)

  • 1 lime

  • 1 cup quinoa (uncooked)

  • 1 1/2 cup vegetable broth (home made is best)

  • 15oz can of diced tomatoes (I use Fire-Roasted)

  • 2 tsp chili powder

  • 1 tsp ground cumin

  • 1/8 tsp ground black pepper

  • 1/8 cup fresh cilantro

  • 15 oz can pinto beans

  • 1 cup frozen corn

Optional toppings: Avocado, cilantro, cheese, tortilla chips

Instructions:

  1. Rinse quinoa and beans

  2. In a large skillet, heat a small amount of oil (or water) over medium heat. Add onion and pepper and cook approximately 5 minutes until the vegetables begin to soften.

  3. Add quinoa, broth, beans, tomatoes, corn, spices (not cilantro). Stir well to combine.

  4. Cover and continue to cook for about 20 minutes over medium heat until quinoa is cooked; stir occasionally

  5. Remove quinoa mixture from heat, stir in lime juice, cilantro and additional toppings to taste

**Quinoa can be soaked overnight in water beforehand to facilitate digestion, increase availability of nutrients and reduce cooking time.
